marco the brewmaster
...the origin story
Years after home brewing with his father, Marco began to consider the pastime as much more than a hobby. With the encouragement of his older brother Nick, now co-owner, Marco enrolled in the upper level biology and chemistry prerequisites required to waitlist for the University of California, Davis - Brewmasters Program, widely considered as a world-class curriculum. While waiting to be accepted and enrolled he made a considerable investment, both in time and financially, in scaling to a nano-brewing level of production. After extensive research he began to assemble the tools, still used today, with equipment from SS Brewtech and Blichmann.
In 2018 he completed the UC Davis Brewmasters Program and returned to Spokane where he produced and self-distributed his craft beer from a detached garage in the Perry district. While honing his craft in these modest accommodations the plans to expand to a public taproom with onsite brewery began to take shape...
In early 2019, work began on the mid-century structure that would become Bottle Bay Brewing Co. The space was outfitted with a custom 12'x12' walk-in refrigerator, a milling room, a laboratory and an 18 foot trough drain for the brewing space. The decades old electrical was completely retrofitted and the brewery was equipped with an enormous hood ventilation system.
It was essential for us that a place for family and friends to imbibe these inspired brews recreated the experience of the lake cabin life. In this place of the world peppered with those small bodies of water we knew you'd enjoy a quick get away without having to pack the car or hitch the boat. The Plastino brother's family has a long, storied history at Bottle Bay on Lake Pond O'reille. Where their mother's side of the family, the Stewarts, have had waterfront property for generations. Instilled with the essence of the outdoors and the adventures of our origins, we hope to bring that spirit to the lake cabin taproom at Bottle Bay Brewing Co.
